Mondays are for meatless comfort food, like this vegetable tajine with couscous. And roasted almonds, mint, coriander and crumbled feta on top. It’s a great way to get the little ones eat vegetables too. Stepdaughter says she doesn’t like zucchini. Guess what was in this tajine, together with butternut squash, tomatoes, eggplant, onion, yellow and red bell pepper, chickpeas, dried apricots and carrots?
